Beverly's Update - July 2025

Unbelievable that it is July. We deadhead our flowers to help continue the blooms, harvest daily as vegetables always taste better when young and tender, try to stay on top of the pests as we walk daily through the gardens, hope that we can use all the vegetables, herbs and flowers as they take over the kitchen. We mulch, mulch, mulch to retain moisture and suppress those pesky weeds and the planting continues as we prepare for Fall crops.
July brings magical moments on the farm. Harvest baskets will overflow with tomatoes, peppers, eggplant, cucumbers, beans, fennel, berries and of course, the abundance of squash as they quickly fill the kitchen. We are picking wineberries and soon blackberries. We have an abundance of nasturtiums and basil - creating lots of pesto. The garlic will be soon harvested and the herbs are flourishing.
This is the perfect time to visit your local farmer's market. Feel the connection to the earth, knowing that the fruits and vegetables found in your garden or at the local market will sustain us through the next months. It is satisfying knowing that we are creating food that is healthy and enjoyed. What fun to pick from your garden and come inside and create a dish that tastes fresh and is full of nutrition. The recipes are endless. This is the prime time of the year for farms to shine. Enjoy as you visit the farmer's markets choosing from a wide selection of fruits, vegetables, breads, honey or flowers creating pure wonderment. The rewards are many at our restaurant knowing we respect the earth and honor where the food comes from whether it be from the grower, producer or straight from our farm.
Whether sitting in our glass conservatory, gazebo or open-air tent, the view overlooking the Potomac River never disappoints. A tranquil setting, inspired by nature, the venue presents a breathtaking view and natural setting. Join us for a celebration of the connection between kitchen and earth. Each course presents inspiration for the seasons and harmony with the earth. The chefs draw from what the region has to offer, crafting a progression menu on what our farm and local farmers, fishermen and foragers provide.
