PLEASE DONATE TO COLBY'S CAMPAIGN TO FIGHT CHILDHOOD HUNGER

Access the facebook fundraiser here.

Chef Colby will participate in Chefs Cycle, a No Kid Hungry event to be held in Bend, Oregon, June 2 - 4, 2025.

Chefs Cycle isn’t a race - it’s a celebration of your dedication to fundraising for No Kid Hungry. Whether a professional chef, a food enthusiast, a hospitality professional, or a No Kid Hungry advocate, anyone can participate.

During the two-day ride through Bend, Oregon, riders support one another, with experienced cyclists helping beginners, and everyone crossing the finish line at their own pace.  They can do daily 100-mile routes or opt for the slightly shorter (approx. 60-mile) route that still offers a great challenge.

With a mission-driven focus, Chefs Cycle riders commit to an individual fundraising minimum of $4,500. These funds cover accommodations, ride entry, and support No Kid Hungry’s mission to end childhood hunger in America.

Colby believes no one is more entitled to food than our youth.  He wants his personal purpose to mean more than just cooking and this is a step in that direction.  He would truly appreciate your generous support of his Chefs Cycle campaign benefiting No Kid Hungry.  Your contribution will truly make a difference in the fight against childhood hunger.  We would all like to express our heartfelt gratitude for your generous support of Chef Colby's Chefs Cycle campaign benefiting No Kid Hungry.

No Kid Hungry

No child should go hungry in America. But millions don’t know where their next meal is coming from. No Kid Hungry is ending childhood hunger by helping launch and improve programs that give all kids the healthy food they need to thrive. This is a problem we know how to solve. No Kid Hungry is a campaign by Share Our Strength, an organization working to end hunger and poverty.

Every child deserves three meals a day to grow up healthy and achieve their dream.  Unfortunately, 9.3 million kids may face hunger this year in America.  As fierce advocates for children and family, No Kid Hungry brings together experts, parents, teachers, decision makers and leaders to end childhood hunger in America.

April and the farming under Bonnie's hard work and dedication is in high gear for the next several months.  We welcome the spring sunshine and the freshness of the air.  A sure sign of spring is the sound that erupts during the day and night as we enjoy the peace and serenity of the chorus of frogs, squirrels abounding, birds returning, geese making their way back and the days getting longer, especially at sunset.  The light changes and the earth comes alive.  The redbuds are showing their color and I soon realize I survived the semi-cold winter and am headed back to renewal, light and regrowth.

Plants are abounding - there doesn't seem to be enough time.  Tomatoes, eggplant, peppers, celeriac, celery, basil, zinnas, corn, squash, cucumbers and watermelon and more flowers fill the little greenhouse.  Swiss chard, cabbage, lettuces, mizuna, mustard, spinach, tatsoi, pac choi, kohlrabi, broccoli raab, onions, carrots, radishes are in the ground.  Peas are coming up fast as are beets, kale, and so much more.  Ramps are here.  Flowers are blooming, the forsythia is beautiful - Spring is definitely here.  We wait anxiously for the first of the asparagus, as well as strawberries, morels and fiddleheads.

The tent is back up and as it gets warmer, you have the option of sitting outside under the tent or dining inside.  The view overlooking the Potomac never ceases to amaze me.  A tranquil setting, inspired by nature, a natural setting making your dining experience peaceful and calming.

We look forward to seeing you at the restaurant.  We strive to excel at turning ordinary evenings into extraordinary ones.  Each course presents inspiration for the seasons and harmony with the earth.  The chefs draw from what the region has to offer, crafting a progression menu on what our farm and local farmers, fishermen and foragers provide.

Please support your local farmers.  Thank them, the artisan producers, wineries and breweries that work with so much pride to provide you and us with outstanding products.  We appreciate the dedication and the extraordinary job they do each and every day.  There is no substitute for the simple pleasures that "real" food can provide to your body.

Regardless of the season, you will experience local cuisine that comes from our farm, our neighboring farms and those artisan producers that provide us with sensational products.

It continues to be my honor to welcome you to the restaurant.

Enjoy the Spring and the exciting rebirth of the land, the anticipation of the planting season and the impending harvest.
